Ingredients:
-1 tbl of vigin olive oil
-2 cups of chopped onion
-5 cups peeled fresh pumpkin (substitute butternut squash)
- 1 tsp ground ginger
- 1 tsp cumin
- 1 tsp coriander
- 3/4 tsp turmeric
-1/4 tsp cayenne pepper
-3 gloves minced garlic
- jalapeno, finely chopped
- 4 cups veggie broth
- 1 can diced undrained tomatoes
-1 cup of small red lentils
-salt/pepper
- 1/4 cup cilantro
- 6 lime wedges
Serve over jasmine rice
Heat oil in saucepan over medium heat, add onion (cook for 5 mins) add pumkpin + ingedients up until jalapeno. Add broth and tomatoes and boil. Cover, reduce and simmer for 10 minutes until pumpkin is temder. Stir in lentils, cook 10 minutes until lentil are tender. S&P. Sprinkle with cilandro and lime.

Moroccan Carrot Salad
So easy and so much flavor!!!
- Boil 1lb of carrots in salt water
- drain and add:
- oil
- cilantro
- garlic
- lemon juice
- cumin
- cayenne pepper
- s&p to taste
