chanukah indian latkes

1 cup yellow split peas, washed
Vegetable oil
1/4 to 1/2 teaspoon dried hot pepper flakes
1-1/2 inch piece fresh ginger, peeled and grated or minced
1 clove garlic, minced... See More
1/2 cup fresh cilantro
1 teaspoon ground coriander
1 teaspoon ground cumin
1 small onion, minced (about 1/2 cup)
1/4 cup flour
Soak the split peas in water for about three hours. Drain. While you prepare the latkes, heat oil to a depth of three inches in a wok or large, deep saucepan until it reaches a temperature of 365° F. Preheat the oven to 200° F. Place the split peas in the bowl of a food processor and add chili, ginger, garlic, cilantro, coriander, and cumin. Process until the mixture is a coarse puree, adding water if necessary. Add the onion and salt and pepper to taste; stir in (don't process). Add flour if the mixture is too thin. Drop about 1/4 cup batter into the hot oil for each pancake, and fry until lightly browned and crispy (about four minutes total). Drain each batch and remove to oven to keep warm while you continue cooking. Serve hot.

Miriam Rhodes' Apple Date Cake

> 1 cup oil
> > 1cup honey
> > 1cup maple syrup (use date syrup in the land of israel)
> > 4 eggs
> > 4tsp. baking soda
> > 2 tsp cinnamon
> > 2 tsp salt

> > 4 cups flour

> > 2 cups chopped date
> > 6cups chopped apples

"mix or whisk all the ingredients from oil through salt. when mixed well, add the flour. then gently add the dates and apples. stir lovingly. Bake in a preheated 350* oven 45 minutes or until cake comes away from sides of pan. you can proudly say: this cake contains no sugar! people will plead for the recipe. may be used as lekach for tishrei. enjoy" (thank you miriam!)

Amanda's Green tea and soy milk truffles

1 cup of vanilla soy milk
2 green tea bags
1/2 lb 70% dark chocolate
3/4 cup of unsalted pistachio nuts (shelled)

boil milk with tea bags slowly, remove bags and pour boiling milk onto chocolate, stir for 2 minutes and let cool for 2 hours in room temp., meanwhile, grind pistachios in food processor, shape truffles and roll in grounds

Sweet Chestnut Brownies

Step 1: Melt 3.5 72% dark chocolate and 1/2 butter and 1/3 cup sugar
Step 2: add 4 egg yolks, whisking vigorously after each
Step 3: whip the whites until peaks form, fold delicately into mixture
Step 4: add 1/4 walnuts, pecans and 1/2 cup toasted chestnut flakes or almond or hazelnut powder

bake on greased pan for 25-30 minutes on 375 (190)

Pakchoi (Balinese soup)

- 10 green onions, set aside green part
- 1 3/4 coconut milk
-4 tsp soy sauce
- 2tsp brown sugar
-1.5 tsp curry
-1 tsp fresh ginger
-2 tsp garlic chili paste
-4 tomatoes
-1 yellow pepper finely slices
- 1 1/4 mushrooms (preferable shitake)
- fresh basil
-pakchoi or spinach
-cubed silken tofu
- salt and pepper

in saucepan mix milk, soy, sugar, curry, ginger, chili and boil slowly
add all else except pakchoi and tofu...add at the end for 5 minutes

Chai

6 cups water
8 slices of fresh ginger
12 cloves (whole)
1 star anise
1/4 tsp fennel seed
7 cardamom seeds (crushed)
1/2 cinnamon stick
3 green tea bags
milk or soy milk or almond milk
honey

Adi's Garbanzo Bean Chocolate Cake

I learn Gemara and gluten-free cooking from the same woman!

* 1 1/2 cups semisweet chocolate chips
* 1 (19 ounce) can garbanzo beans, rinsed and drained
* 4 eggs
* 3/4 cup white sugar
* 1/2 teaspoon baking powder
* 1 tablespoon confectioners' sugar for dusting

1. Preheat the oven to 350. Grease and flour a 9 inch round cake pan.
2. Melt chocolate chips
3. Put beans and eggs into food processor until smooth. Add the sugar and the baking powder, and pulse to blend. Add in melted chocolate and blend until smooth (scrape corners)
4. Bake 40 mins or until a knife inserted into the center of the cake comes out clean. Cool in the pan on a wire rack for 10 to 15 minutes before inverting onto a serving plate. Dust with confectioners' sugar just before serving.

Rivka Marga's Challah

1 Batch makes 6 Challot

Bowl 1:
3 cup water
1 cup sugar
1 cup oil
5 eggs
2 tbl salt

Bowl 2
1 cup lukewarm water
1 square of yeast
2 teaspoon dry yeast
2 t sugar
when it bubbles, add to bowl 1

After combined, gradually add 2 kilos of flour, let rise 30 mins and bake at 350

Chocolate, fruit and nut Bark

16 ounces of semisweet chocolate
1/2 cup of almonds
1/3 dried blueberries
apricots and dried cranberries

melt chocolate in a tin, add goodies, let it cool, and break into small pieces

Moroccan Fish

(put ingredients in this order...layer them)

oil in a pot
tomatoes on the oil
white filleted fish (perch)
lots of squeezed lemon
salt
red bell pepper
chunky head of garlic
hot peppers (use with caution ;)

On the side prepare a water/oil/heaping spoon of paprika mixture
pour into the pot and add a head of cilantro

Crispy non-cook bars

1/2 cup honey
2/3 cup tehina
1/2 crushed sunflower seeds or walnuts
1/2 cup chopped dates
4 cups of crisped rice
mix and roll into sesame seeds

Good, Healthy, and High in Protein!

Yum Salad Dressings

-5 Tblsp of sugar
-6 Tblsp of vinegar
-4 Tblsp of oil
-2Tblsp of soy
-1 Tblsp of tomato paste
garlice and salt

Siga's Peach Sorbet

- 2 pounds of fresh peaches (or frozen...not preferred)
- 5 tblspoons of grand marnier (orange liquor)
- 2/3 cups lemon juice
- 1 cup of something sweet (juice concentrate..cherry, apple...sugar, date syrup)
- dash of cinnamon
Blend peaches
Blend other ingredients separately
then put it together
Freeze
Blend again
Freeze again...and tada, creamy yummy sorbet

- 1 cup of nuts (almonds/sunflowerseeds/walnuts/brazil nuts) soaked over night
- 2 tbl spoons raisins (soaked)
- 1 cup high quality unsweetened cocoa powder
-2/3 cup honey

blend until smooth
roll in coconut or walnut flakes

Sigalit's Granola Bars

mix these:
2/3 oil
1 1/2 cup brown sugar (substitute with date syrup)
1/4 cup honey
2 teas vanilla
4 eggs
2 cups whole wheat
2 tea cinnamon
1 tea baking soda
1/2 t salt

then add these:
3 cups oats
4 cups puffed rice
2 cups nuts
up to 2 cups dried fruit (raisins, apricots, etc)
TONS OF LOVE

Press in a pan and bake 350 for 1/2 hour or a bit more

Milk Substitutes

Almond Milk - so easy soooo yummy..can this really be healthy?
-soak 1 cup almonds overnight to release enzyme inhibitors (rinse well the next morning in cold water)
- 4 cups of water
- 2 tblspoons of coconut flakes and/or 5 macadamia nuts and/or fresh coconut
Blend a lot, strain out almond pulp with cheese cloth or porous fabric, put back into blender with
-1/4 inch fresh vanilla stick or 3 drops of vanilla extract
-10 Halawi dates (seeded and checked)
- optional: add carob power for chocolaty drink
serving suggestions: with ice to refresh, pour over granola or fruit, great milk replacement

Sesame Milk .. sesame is very good source of calcium that the body can actually absorb. Good for broken bones and improving osteoporosis
- 1 cup sesame seeds (soaked overnight)
- 5 macadamia nuts
1) add to blender with 3.5 cups of cold water
2) strain with cheese cloth or fabric
3) blend again with
- 16 halawi dates (checked and pitted)
- 1/4 inch fresh vanilla stick or 2 drops of vanilla extract

Brazil Milk
-3/4 cup of almonds soaked overnight
-1/2 cup of brazil nuts
(follow the rest of the directions for sesame milk)

Chai Coconut Milk
-the meat from 1/2 fresh coconut
-3.5 cups of water
1) Blend for 2 minutes
2) strain
3) add to blender with 16 halawi dates and vanilla bean
4) pour out
5) sprinkle powered chai spice (cinnamon, cardamon, cloves, and ginger)

Banana Ice Cream
-3 peeled frozen bananas
-tahina (with husk)

How to pickle capers/olives/parsiline leaves

put in jar
add vinegar equal to the caper/olive
garlic
onion
peppercorn
bayleaf
mustard seeds
lemon (cut into slices)
salt
seal and let chill for a long time

Chava's Simple Bread Puddin'

-tear old crusty bread into small pieces
-add soy or milk (1.5liquid=2 cups bread)
-clove, nutmeg, cinnamon, vanilla
-optional: sugar, coconut, raisens

Stir over flame until mush, pour into pan and bake 15-20 mins until golden brown on top
