Rita's Apple Cake
1 1/2 cup of oil (substitute applesauce for healthier, fluffier, and just for good measure!)
2 cup sugar
3 eggs
3 cups of flour
1 teaspoon of salt
1 teaspoon cinn
1 teaspoon baking soda
1 teaspoon vanilla
4 apples (sliced thick
1 cup of chopped walnuts
Bake on 350 for 1 hr 10 minutes
beat oil and sugar til smooth
add eggs and beat stir in dry ingredients
add vanilla, apples, walnuts
cool completely before removing from pan

Jamie's Orange Chicken
mmmmmmmmmmm..so good
2 chickens cut into quarters
3/4 cups dark brown sugar
2 tbl. dry mustard powder (regular mustard will suffice)
1/4 teaspoon cornstarch
1 cup orange juice (not from concentrate)
1 (12-oz) jar of orange marmalade
2 navel oranges (thinly sliced)
preheat to 375
place chicken in baking pan
cover with mixtures
put sliced oranges on top
Bake, uncovered, for 1 hour
Baste with pan juices and bake another 15-20 minutes or until oranges are deep amber color and chicken is fully cooke (duh)
