- 5 cups of flour (use half whole wheat)
- make a well and add 2.5 tsp yeast, tbl salt, tbl sugar
- Add 2 cups of warm water and whip the dough
*tip: wet hand in water before whipping
- Repeat whipping every half hour 3 times
- pour oil on the counter and roll out dough into flat sheet
- pour a little oil on the dough and roll it, cup into 6 sections
- place pieces at bottom of an oiled tall pot and let rise unti 3/4 high
- bake covered on bottom shelf on 350 for an hour or until crispy
